    a rotating art gallery inside a restaurant sounds cool but I just want good food at a reasonable price, not a whole experience every time I go out to eat

      That's a completely fair point, the art installations are optional additions, and at their core, these restaurants are still driven by exceptional seasonal ingredients and skilled cooking that stands on its own merits.

    the binchotan charcoal thing is real, had it at a place in SF last year and the flavor is just different. Glad Sonoma is catching on.

      Travis M.Same, I tried it in SF too and kept wondering why more places around here weren't doing it. The smoke is cleaner somehow, doesn't overpower the food. Which spot in Sonoma have you heard is doing it well? Trying to figure out where to go first.

      You nailed it, that smoky depth binchotan imparts is hard to replicate with any other method, and Wine Country's incredible local produce makes it an especially natural fit.
